Vegan Mushroom Soup
Super easy and super delicious
• 1 Tub Dr Broth Vegan Broth
• 500g button mushrooms – chopped – or any mushroom will do
• 1 medium sized sweet potato, peeled and chopped
• 2 Tbls extra virgin olive oil
• 1 Pinch of salt
• 1 Tbls Sesame oil
In a medium saucepan on the stove, sauté your mushrooms in the olive oil until they are a deep golden colour.
Add a pinch of salt and the chopped sweet potato. Pour in the broth, bring to a simmer, and cook until the sweet potato is soft.
Add the sesame oil to garnish.
Carefully! Blend until smooth and enjoy.
