Spicy Mushroom & Veg Noodle Bowl
• 1 Tub Dr Broth Vegan Broth
• 1 cup sliced leeks
• 1 tbls olive oil
• 1 fresh red chilli – chopped
• 1 cup bok choy – white part and leaf sliced
• +- 2 tbls sliced spring onions
• 200g of your favourite noodles 1 tbls sesame oil
• (optional – poached eggs)
In a saucepan over a medium heat on the stove, gently soften your leeks and chilli in the olive oil.
Add the broth and bring to a simmer.
Add you noodles, and when they are ready add the bok choy, spring onion and sesame oil
Sr with a poached egg or 2 if you like .
