Pearl Barley in Mushroom Broth
This is a very easy way to make a deeply flavoursome pearl barley, which can be eaten as a side dish , served cold in a salad, or dressed up, as a dish on it’s own.
• 1 cup pearl barley
• 1 Tub Dr Broth Vegan Mushroom Broth
In a medium saucepan bring the barley and broth up to a simmer, simmer for about 40 minutes, stirring occasionally
until the broth is absorbed, and the barley is soft.
When it is ready you can add some parmesan cheese and some spinach leaves and serve as aside to a roast or braise.
With some roast butternut, feta and dukkha spic it’s a great dish on it’s own.
